HNC summer ‘slaw – the perfect Summer Salad!

My husband hates mayonnaise. I mean REALLY hates it! So a ‘normal’ version of coleslaw is definitely not an option for us! That’s ok though – as I actually love this version even more. It’s lighter, fresher, and the mint, coriander and lime really give it a tropical feel. A perfect summer salad!salad

 

WHAT YOU NEED

1/2 a red cabbage, shredded finely

60g toasted macadamias, chopped coarsely

¾ cup coriander, chopped

½ cup mint leaves

2 celery sticks, thinly sliced diagonally

1 large carrot, peeled, cut into thin long strips (or use a julienne peeler)

½ red capsicum thinly cut into strips

4 green shallots, thinly sliced diagonally

Dressing:

¼ cup freshly squeezed lime juice

¼ cup extra virgin olive oil

1 tsp honey

Salt and pepper to taste

HOW TO DO IT:

1. To make the dressing, combine the oil, lime juice, and honey in a small jar and shake to combine. Season with salt and pepper, put in the fridge until ready to serve.

2. In a large bowl, combine the cabbage, celery, carrots, capsicum, shallots, mint leaves, and coriander leaves. Toss with your hands.

3. Sprinkle the toasted macadamias on top. Pour over the dressing when ready to serve. Enjoy the fresh flavours!coleslaw
