HNC Bliss Balls – Two ways
Bliss balls. Little balls of bliss. Sweet little treats that are good for you!
There are heaps of different versions of bliss balls out there, here are two of my favorites: ‘Chocolate, Coconut and Chia balls’, and ‘Lemon, Coconut Chia balls’. They are easy to whip up and use ingredients I always have in my pantry. Once you get the hang of them, you just add in anything you have on hand.
Make sure you note the difference between Cacao and Cocoa powder. Cacao powder (pronounced ca-cow) is a superfood in itself – rich in magnesium and antioxidants. Cocoa powder that you buy in the cake section of the supermarket, is cacao that has been processed and roasted and so has lost its antioxidant power and stripped of its goodness. So, to ensure you are getting the most from your chocolate fix, swap from using cocoa powder to raw cacao powder. You may have trouble finding it in the supermarket, but specialty greengrocers, health food stores, organic supermarkets etc stock it. It’s a little more expensive than the supermarket stuff – but a little goes a long way and – hello – no guilt for eating chocolate – I’d pay anything for that!!!
The Lemon Coconut Chia balls don’t require a high speed blender. The chocolate bliss balls could easily be mixed by hand also if you swap the cashews for cashew nut butter, and chop the dates finely. Or you could soak them, blitz them with a stick blender then mix the rest of the ingredients through. Get mixin’!
CHOCOLATE COCONUT CHIA BALLS
1/2 cup raw cashews, soaked
1/2 cup almond meal
1/2 cup desiccated coconut + extra for rolling
6 large medjool dates, pitted and soaked
2 T cacao powder
1 T chia seeds
1 T coconut oil
1 T raw honey
1/2 t vanilla extract or 1/2 t cinnamon (or both!)
1. Make sure you soak your cashews and dates in water prior to making, this will help the ingredients to blend and combine easier.
2. Combine everything in your high speed or food processor.
3.. Roll into balls, and coat in desiccated coconut.
4. Leave to set in fridge or freezer. Enjoy!
1 cup Almond Meal
1 T Chia Seeds
2 T Coconut Oil (melted)
Zest and Juice of one small Lemon ( a little less or more depending on how ‘lemony’ you like things)
1 1/2 cups Desiccated Coconut + extra for rolling
1 tsp Vanilla Extract
1 1/2 – 2 T Raw Honey
1. Combine all ingredients in a bowl. Combine well.
2. Roll into balls, and coat with coconut.
3. Allow time to set in the fridge. These will be better the next day 🙂
4. Store in an airtight container for a week or so.
